Meal Planning Monday #8 {11 May}




  

This weekend has flown by! I worked all day on Saturday (9am - 6pm) then on Sunday we were in Manchester as Michael was running the Manchester 10k, so we were out most of the day again and as such, we've not really had time to do a proper shop. Michael went today as he had the day off and got some essentials. Luckily, we live near a Tesco express and we both work near a larger Tesco so if we have forgotten anything, we can always call in. I hate not feeling organised though. This is the 1st week since I started meal planning that I feel I've really rushed it and not had chance to properly plan, so I'm hoping we've enough in for lunches and evening meal's!

So, here is what we'll be eating this week:

Sunday: Curry from Asda
Monday: Fish pie
Tuesday: Chicken wrapped in bacon stuffed with cheese
Wednesday: Gammon, egg and slimming world chips 
Thursday: Possibly scrambled egg on toast / bacon and poached egg on toast (Michael is working away, and Alfie only needs a bit of something as he eats at nursery).
Friday: Beef enchiladas

On Saturday, we are having a bbq (weather permitting) as it's my birthday next Monday, so Saturday will be bbq food. Yum! :)

My Boy Lately - A long over due letter!

It’s been so long since I’ve wrote to you, 8 months to be precise. You can read your last letter here. 

In August, we were so busy planning the wedding that I just didn’t get chance to sit down and write then in September, when it was your 2nd birthday, we were on holiday so I was offline for 2 weeks. I did start to write to you in my diary, but I never finished it as we were just having far too much fun on holiday.

I’m so glad that we took you away with us. It was so special to have you on our honeymoon and to celebrate your 2nd birthday somewhere hot and sunny. We had such a lovely day. You woke up and the 1st thing you spotted were the balloons that I’d blown up for you with the banners and a few little presents. We didn’t take much away with us in terms of gifts for you, but we had bought you a DVD player for the plane, which was part of your present – it was the best thing we could’ve bought as it was invaluable on holiday. Once you’d opened a few presents we got ready and went for breakfast in the main hall. The day itself wasn’t really too much different to every other day on holiday but it was special because my big boy was 2. When we went for our evening meal, I took you a candle and little banner for the table and people were stopping to wish you a Happy Birthday, which I loved although I don’t think Daddy was too keen! We let you stay up and took you to the Children’s disco and at the end everybody sung happy birthday to you with you up on stage, which brought a tear to my eye. I know you won’t remember it, but I will and it was the loveliest day I could have hoped for, for you.

When we got back off holiday, we had a little family party for you at our house. There was the three of us, Nan and Grandad, Nana and Papa, Auntie Emily, Auntie Paula, Uncle Mark, Jack, Holly, Auntie Lorrie and Amy. It was such a lovely day and I managed to get a family picture of us all, which is something I will really treasure. It was so nice to see you playing with all your new toys. Daddy and I bought you some football nets and you really loved kicking your ball into them and shouting ‘Goal’ . We got you a Peppa pig cake as was your favourite thing to watch in at the time.

In October, we had big changes. We had loved being with you every day for 3 whole weeks, whilst we were off work for our wedding, but in October, a chance to go full time came up at work, and I took it. I was the hardest decision I’ve made as I really wasn’t ready to leave you and work full time. At the time I was working Sunday – Thursday 8-12 and going full time meant I’d have to work until 5pm every day. The hardest thing of it all, was putting you in nursery and having to sacrifice Sunday’s with you and your Dad, as it would now mean we would only have one day a week together. Nan and Grandad had said they would have you 2 full days during the week and one morning so it meant you would be in nursery Monday afternoon’s and a full day on a Thursday, with Nan and Grandad on Tuesday and Wednesday and me on a Friday. We did your settling in sessions and I did go well. Some days you were better than others, but we did have a few setbacks with time off.

In November, you’d only been going to nursery about 4 weeks and you got really poorly with impetigo and chicken pox at the same time. Your little face was a mess, so we had to keep you off, then once you were over that, you were getting really bad colds right through to December, so you had to have  a few days off here and there which didn’t make it easy settling you in properly at nursery.  I so wanted to be there for you, but I had to let go. I had to remind myself that nursery would be good for you, to learn and develop and to make friends of your own without me and Daddy or Nan and Grandad. Which you soon did and when it came to your 1st parents evening you were doing really well and were advanced for your age.

26 Months Old! 



At the start of December, we took you to a farm near the lakes to go and see Father Christmas. It was the 1st time we’d taken you to see him and it was magical. We went to a little nativity 1st with a real donkey, then moved into another room where everyone was rushing to see the big guy. You weren’t very keen on him and I don’t think you quite knew what to make of him, but I’m still really glad we took you. The day itself was freezing cold and pouring with rain, but we made the best of it. Christmas this time was great as you really seemed to understand it much more and you knew that Father Christmas was coming with his reindeers, which was so cute. In the weeks before Christmas, whenever we went to Middlebrook, you would always ask to see the big reindeer – it was a huge reindeer with lights, which you loved going to see, along with the big Christmas tree. Even now, when we go you still ask to go to the Reindeer shop, but you know that Father Christmas is at the North Pole ;) We had a really nice quiet family Christmas and I loved being able to spend so much time with you and Daddy.

2015 hasn’t been the best year so far for us. There has been things going on which I’ve been distracted  by a lot this year and spent a lot of time angry and upset because of it. I hope that you haven’t picked up on this, but it’s made me treasure moments with you even more, and I really am very grateful to have you and Daddy. 

In January, there was more change. The biggest one was we moved house! It's still very close to our old house, but it's got 3 bedrooms. You took the move in your stride and made us so proud at how well you adapted. We also thought it was the right time to put your from a cot to a bed, so we made the transition. It's been a great decision. Also, I was quite poorly at the start of the month and ended up in hospital (on the day we moved) so I was quite poorly for a couple of weeks - it was nothing serious. Just a viral infection, but it really took it out of me. Also, Daddy got a new job, so we weren’t working together anymore and he was dropping you off at Nan and Grandad’s on the way to work, then your Nan and Grandad would pick me up from work and take us home. January was a difficult month, so it’s not one I want to dwell on.  One of the positives of the month and something I’m really glad I started, is I’ve arranged with Auntie Paula to get a picture of you, Jack and Holly every month this year to put them all together in a photo book for Nan at Christmas. It’s something I’ve really enjoyed doing, and it has given us a change to all be together at least once a month, although sometimes it’s really hard to get you to play ball as you’re going through a stage of not wanting to pose for pictures, unlike Jack and Holly, who love it :)

February bought  yet more change as I reduced my hours at work from five full days to three full days and two half days, meaning, I would get Tuesday and Wednesday afternoon’s off with you. We had to do this as it was getting a bit hard for Nan and Grandad having you for two full days as Grandad still isn’t in the best of health after his heart attack in 2014. It’s been a great decision as I feel like I get more time with you during the week, which makes up for not being at home on Sunday’s.

March was probably my favourite month of the year so far. We started the month off by going away for Daddy’s 30th birthday. We went to a holiday cottage in Bridlington for a long weekend, and we really did have the best time. The holiday cottage was really gorgeous and it had its own hot tub, which we all loved. We went to the beach for a couple of days and went shopping in the local town. It was so nice to all be together for a few days and to have some much needed quality time together. Your favourite thing was spending time with Daddy in the hot tub and going on the beach and throwing stones in the sea. You were very well behaved for the most part, especially given that you didn’t have your home comforts and many toys with you. The following weekend when it was Daddy’s actual birthday, we had a party at our house and had a really nice time with everyone. It’s so great to see you playing with Jack and Holly as you seem to be building great friendships with them. You are probably closer to Holly as she’s closer to you in age, but Jack is very protective of you and will look out for you. Then we're into April. It’s been a nice month. We’ve had some lovely weather, so have been getting out as much as we can. Easter was at the beginning of  the month, so we did you your 1st Easter egg hunt, which you really enjoyed (although I think I enjoyed planning it more). On Easter Saturday, we spend the afternoon at the park with Nan, Grandad, Auntie Paula, Uncle Mark, Jack and Holly. There was so much going on and you went on your 1st ride with your big cousins sitting either side, keeping tight hold of you. My heart was in my mouth the whole time but you really enjoyed it. We took your little bike too, so you played on that too, which was nice for Paula and Mark to see  as they got it you for your birthday.


I also made you three wear the ears - although Jack and Holly didn't mind, it was only you who put up a fight!

The rest of April has been pretty quiet and uneventful. We had your 2nd parents evening and as expected you are a little superstar! Gina is so pleased with your progress which makes us so proud.

As we head into the summer, I'm so excited for lots or days out and 'picmics' in the park with you. All we need now is some sunshine!

'She Believed She Could, So She Did'

When I was growing up, all I wanted to be was a secretary. I used to spend hours playing office when I was a little girl. I’d play ‘office’ in my bedroom, in my garden house, at my grandparents, anywhere I could. I was obsessed with answering the phone, writing notes in my notebooks in different coloured pens and making up office scenarios to play out. The best times were when I could rope my cousins or my friends in too. When I was 9, my Mum and Dad bought me a garden house and inside was like my own little office. I had a desk with an old phone on it, shelves, and a children’s laptop (which I would play spelling games on). I loved it. Every time anyone asked me what I wanted to be when I grew up, the answer was always a secretary. 
At school, I wasn't really the academic type. I did OK; I was an average student – always preferring English to Maths (I’m still terrible at Maths now). I wasn't really the type of girl who wanted to spend all my days studying but when I went to college, I still wanted to be some form of secretary, so I enrolled for the OCR Certificate in Administration and Secretarial Procedures Level 2. I really enjoyed the course and passed with distinctions and merits in the different sections. I’d enjoyed it but that was as far as my studies went. I didn't go to university as I wasn't given the option at the time. Back when I was 17, I wasn't overly bothered about not going to Uni, but it is something now that I deeply regret, not only from an academic perspective, but also the social aspect of it. I’m by no means a drinker so the going out partying didn't and doesn't appeal to me (I actually hate being drunk), but I mean more so for the friendships I would have made and what I would have gained from it. I often wonder where I’d be now if I had have gone to Uni because I just kind of fell into a career in Customer Services. 
Over the last 12 years, I've never been without a job and have always done OK but I feel like there’s something missing, like I’m not reaching my full potential. I first started at the company I work for now in 2009, I was made redundant in 2012 and I came back in 2013. Coming back was a massive step for me. When I’d first started at the age of 22 I was in customer services, I was ambitious. I would always strive to be the best; I wanted to know everything about my job, why we did things, how we could improve things, and what other departments did. For a good couple of years, I really enjoyed it. It also happens to be the place where Michael and I met. Around the time Michael started, there was the opportunity to apply for a more senior role. I was hesitant to apply for it, but all the team leaders in the department and even the manager encouraged me, saying I would walk the interview as I knew the job inside out…I didn’t get it. I was devastated at the time. When I was given feedback as to why, it wasn’t constructive (I’d been told I’d used a particular word too many times during the role play escalated call I’d done and I’d crossed my arms in another of the activities on the day). No matter how many times I asked for constructive feedback and what I could do to improve, I wasn’t ever given it. I was given nothing to work towards. It was the beginning of the end of me wanting to ‘be the best’. It massively affected my confidence and that’s when I stopped believing in myself… Sure, I’d been for jobs before and not got them, but this was different. I’d really wanted this and worked hard for it. 
After a few months, a job came up in another department which would ultimately be working to make the company the best place to work and keeping staff happy. By this point, Michael had moved out of customer services in to HR, so our hours were different as I worked shifts and he worked Mon-Fri 9-5.30. I went for the job in the other department, and I got it. I felt like it was the perfect role because I was passionate about the company and I really believed in what I was doing. 
Sadly, it wasn’t meant to be as the recession hit hard and I was made redundant, after just 5 months.  I was so upset and to make matters worse I was also four months pregnant. It was a very stressful time, but luckily, things worked out fine as I got a job working where my Dad worked which was on a three month contact which saw me through to my maternity leave.
Going back to work when Alfie was only nine months old was very scary and daunting. I just wanted to be at home with him, but I couldn’t afford to be a SAHM. Lady luck was on my side again as I got a temporary job working with my friends two days a week. They had just started up a business and my friend was also on maternity leave and she was doing a phased return, so the days I did were to cover her days off. The job I did was actually managing the social media accounts for their clients. Two years ago, I didn’t know enough about social media to know the best times to schedule posts or how to attract bigger audiences or which hash tags to use.  That said, I loved the job, really loved it, but I felt like I was out of my depth as ultimately the company was a digital marketing company and everybody had experience in what they were doing, whereas I was from a customer services background and didn’t have a clue about marketing, content, blogger outreach, building websites etc etc. After three months, I was told that they were going to extend my contract for a month as they didn’t know if they were going to continue down the social media route. As it happened, my old company, where Michael was still working, were advertising for a part time role on their delivery team. I applied and got it. I was thrilled and I’d be working with the manager and team leader I knew from my first time there. It not only meant a lot more money (about £400 a month more, plus bonus) but I would be working with Michael again, it was close to home and meant we wouldn’t need to get a 2nd car. 
I’ve been back about 18 months now, and I’ve increased my hours from 20 a week, to 40 hours a week back down to 32 hours a week (due to childcare). I don’t dislike my job but is it what I want to do for the next 10, 15, 20 years? Probably not.  I’ve never kept it a secret that given the chance, I would rather be at home with Alfie than have to go to work and leave him as it was not part of the plan for me to go full time until he was at school. One expensive wedding later and having to put him in nursery for 13 hours a week, means that I didn't have a choice. We can't afford to live off Michael's wage.
Over the last couple of years, since I’ve become more active on Twitter and discovered Mummy blogs, I’ve been in awe at how so many people can actually earn money from having a blog. And I’ve realised it’s what I want too, not necessarily to be making a living from Blogging. I don't believe I could ever do that, but  I spend hours reading blogs, admiring them and wishing I could create something half as good. The main reason for starting my blog, like so many others have done, is to have a record of our lives to look back on with Alfie and any future children we may have but it would be nice if I could also earn a little bit of money here and there too. I’ve read Kerry's post  about quitting your job to be a full time blogger, (which I know I’m years away from yet), but it still makes for really interesting reading and I am looking forward to other post's in the series.  Kerry blogs over at Oh So Amelia and her blog is beautiful and I would really recommend heading over there for a read, if you haven't stopped by before.
I know it’s not going to be easy and I know it will probably take years and years but I’ve done a lot of soul searching this month, and working in a call centre, whilst it’s great for some people, I just don’t think it’s for me. My dream would be able do something where I can work from home and be there to take the children to school and pick them up and not have to sacrifice precious family time at the weekend. Since I started back where I work now and went full time, I have to work every Sunday 8am to 5pm. I’ve done this now since October, and I absolutely hate it and it’s something that I am really struggling with. I am very aware that Alfie isn’t going to be little for long and I’m very mindful of the fact that I won’t get these years back and it’s just so difficult only having one day a week together as a family. 
So, I bit the bullet and signed up for a CPD Accredited course in Social Media. It was actually my friend Emma, who blogs at Life according to Mrs Shilts that signed up for it 1st and passed the details on to me, which I'm extremely grateful for. I’ve realised that I need to start believing in myself more and to work towards my dream of being able to work from home – I’ve lacked confidence in the past few years and have stopped believing in my abilities so I need to work hard to get that belief back.
I'm two weeks into the course and really enjoying it. Whilst it is very business orientated, it's still really interesting and I feel like I'm learning a lot. If it opens doors in the future then fantastic – and if not, at the very least, it will look good on my C.V. and I will have learned something new, which can only be a good thing, right?
I need to do this for me, but also my family.

There's a quote which I see on Pinterest quite a lot - 'she believed she could, so she did' I need to start living by this and believing in myself more! 

Meal Planning Monday #7 {04 May}




Happy Bank Holiday! It's not a very happy one for me unfortunately as I worked all day yesterday and I'm working all day today. Boo :(

Last week was very up and down week for me and things happened which changed our plans, so I didn't stick to the meal plan towards the end of the week. On Thursday's, Michael's Dad picks me up from work, then we go and get Alfie  from nursery, which is just at the top of the road (very handy). He wasn't there when I left work and I got a call from my MiL to say he was stuck in traffic as there'd been an accident. I walked up to nursery for Alfie, but it was an hour until my FiL got there for us. Alfie was so good bless him whilst we waited outside to be picked up. Due to the accident, we got home so late (6.30 instead of 5.20) so I wasn't in the mood for cooking, after being in the cold for so long, trying to juggle keeping hold of a toddler on the side of the road,. Plus, I'd also had to cancel my hair appointment, so I ended up eating some hotpoint which my MiL had kindly sent home. On Friday, I'd totally forgotten that I'd arranged to go for a meal with Mum, and on Saturday, I had a really bad day again, so we ended up with my favourite comfort food of Nacho's!

Here's what I've planned for us this week: 

Sunday: Lasagne
Monday: Pizza for Michael and smash pizza for me
Tuesday: SW Burger in a bowl ( I STILL haven't got round to making this yet)!
Wednesday: Nando's chicken, rice and veg
Thursday: Chicken breast, wrapped in bacon, stuffed with cheese, served with mash and veg
Friday: Chicken Fajita's 
Saturday: Nothing Planned.

I am working on Saturday til 6pm, so Michael will probably arrange something for tea. Usually it would be a treat tea, but as he's running the Manchester 10k on Sunday, we will be having something like pasta.

Meal Planning Monday #6 {27 April}



It's Monday, so it's time for another #mealplanningmonday post. 

Last week seems to have gone by in such a blur - we didn't really do anything much and Saturday is a day I want to forget as it was probably one of the worst days I've had this year, We had already made plans to go to town, so we still went to get out of the house - I really didn't want to stay in. The day got worse as I was sat in the car waiting for Michael who was in a shop 50 yards away, and a traffic warden issued us with a parking ticket. I was in the car with Alfie who was asleep and the traffic warden stood at the front of the car, watching as I tried to  frantically get hold of Michael who hadn't realised that it was pay and display when he'd parked up. The traffic warden was really quite intimidating, which left me feeling really angry and upset, especially after the morning I'd had, so I was in a bad mood for a few hours after the incident and it was just not what I'd needed.

Anyway, I had totally forgot that we were out at my Godmother's on Saturday night as her daughter, who I've known all my life, is moving to Australia for a year, so we went for a little leaving party with her. We followed my Mum up there as they live in Burnley. We took Alfie to the party too, which is something we've never done before - we had arranged to leave him with Michael's parents, but changed our mind at the last minute and took him. I'm really glad we did as he was really on form, and it was nice to see him playing with my Godmother's grandaughter who is just a few months older than him. 

So, with us being out on Saturday, I didn't end up making the burger in a bowl, which I'm really gutted about as I was really looking forward to it, and we also went for an impromptu tea at my Mum's on Friday so we didn't have the full English either. 

This week will see a new routine for us. From tonight and every Monday and Wednesday evening for the next 4 weeks, I'm going to be doing my Social Media course from 7pm - 8pm, meaning I'll have to have tea made, eaten and cleared away and be ready to settle down for the course at 7, whereas sometimes I'm still eating at that time, so I think I'll have to start eating earlier, when Alfie does. 

Our menu for this week isn't very appealing, but we went a bit mad with the chicken and sausages, so we are trying to use those up.

Monday - I am currently full of a cold so have not eaten so Michael had pizza and chips
Tuesday - Gammon, chips and egg
Wednesday - Sausage, Mash and beans
Thursday - Cheese and bacon pasta bake
Friday - Chicken fajita's
Saturday - SW burger in a bowl

Hopefully, I'll be able to make the burger in a bowl on Saturday, as I am really looking forward to trying it - that's this weeks meal I've never made before.

Meal Planning Monday #5 {20 April}



                                         

I’m back with another meal planning Monday.

This week, we needed to go food shopping, as we’ve finally run the freezer down and used all the meat which was in there. 

We did quite well last week and managed to stick to the meal plan. The only meal I didn’t make was the chicken wrapped in bacon, which we are having this week instead.

We have gone a bit overboard on meat shopping this week as we have taken advantages of the offers, so we have 12 chicken breasts, 1 pack of diced chicken, 2 gammon steaks, 16 sausages, 3 turkey breasts, 2 salmon fillets and a burger and 3 packs of bacon!! Luckily it’ll last us a while!!

Here’s what we’ll be eating this week:

Monday – Nandos chicken, rice and veg
Tuesday – turkey steaks, noodles and veg
Wednesday – sausage casserole with mash and veg
Thursday – chicken breasts wrapped in bacon with potatoes/ rice and veg
Friday – sausage (one),  bacon, egg, chips and beans (me)
Mixed grill (sausage, gammon, bacon, chicken and veg) for Michael
Saturday (Treat night) – Slimming world burger in a bowl

The meal which I’ve never made before is the slimming world burger in a bowl. I’ve seen a few different people whom I follow on twitter make it and I’ve always really fancied it, so as I now have the Slimming World fakeaways book I’m going to give it a go.

The Ordinary Moments #1 'Coffee Shop Dates'





 A water and a latte, nothing special right? Wrong. This simple, ordinary moment is one of my favourite moments of the week. As a family, we only have one day a week together which is Saturday as I work on Sunday's, and this is tricky for us as we have a lot to fit in during that one day, but one thing we've always made sure of is that once Alfie is asleep, we will head to Costa or Starbucks and grab a drink.

This is something we've done since Alfie was really tiny and it's a moment I really do look forward too all week. Since Michael got a new job in January and we no longer work together, I have found it difficult to have any quality time with him during the week, so going for a coffee at a weekend gives us a chance to talk about our week and make plans for the upcoming week, which recently has included doing our meal planning and to chat about things we wouldn't normally get to talk about at home when there's a toddler to look after or chores to be done.

We are lucky that Alfie still naps for well over an hour during the day and as much as I love him to pieces, sometimes it is difficult to enjoy a meal or a hot drink whilst he is out with us as he hates being restricted so won't go in a high chair, meaning he is free to get down from his seat and run off. So once he goes to sleep, we will add to our nearest coffee shop and take a breather and catch up.

A very simple thing, which has become one of my very favourite ordinary moments of our weekend :)
